Pastificio Il Mastro Pastaio

Pastificio Il Mastro Pastaio is an artisanal pasta maker in Palo del Colle, near Bari, in Puglia, active for around thirty years. It works with durum wheat semolina from Puglia and Lucania, some of it organic, using bronze dies and slow drying of at least 50 hours, which gives the pasta its rough texture and homemade taste.
