Aux Saveurs Gourmandes is an artisanal smokehouse in Gembloux, Wallonia, founded by Guy Hendrickx in 1999. The salmon, sourced from farms raised without GMOs, is worked entirely on site: filleting, salting, drying, smoking over oak and beech wood (about 24 hours in the smokehouse), then sliced by hand.
